Description
Jakot is a varietal white wine, better known from the past under the name Friulian Tokaj. The must for this wine begins to ferment without cooling, with a two-day maceration. Fermentation continues and ends in a large wooden barrel. The wine is then aged for one year in this barrel on its own lees, without decantation. The first flow is carried out one year before the harvest into a stainless steel tank, where it is only cleaned and stabilized for another year, so that after two years of aging in the cellar it can be bottled without filtration.
